From the fishing village of Howth Chef Daniel talks about the role of fish in Ireland, visiting the local fishmonger and explaining how to go about using your fish sustainably. Surrounded by the Atlantic Ocean to the left, the Irish sea to the right and the Celtic Sea down south, Ireland is not short of quality fish and seafood. As a nation they haven’t always had the best relationship with fish, often exporting the majority of stock overseas but habits are changing and Irish chefs are making the most of the bountiful waters.
