Video classes & resource library

A big part of this program is finding the creative inspiration for your next dish or menu. You’ll have weekly sample recipes to experiment with, different cuisines to discover, recipe development and reading resources.

Group learning & community

Developing your culinary skills doesn’t need to be a solo journey. Learn hands-on in small groups, help each other towards your creative goals and share your experiments with a community of like-minded cooks.

Mentorship & live workshops

Each week you’ll validate your ideas and get live feedback on your creations from industry experts. As you go deeper into the program topics, the instructors are on hand to answer questions and help you get around roadblocks.

Starter kit - tools & ingredients

Receive a box of ingredients and tools designed to kick start your learning. It’s a great way to play around with new flavors and we’ll also provide you with ideas on where to source fresh ingredients and how to stock up your larder.

What you'll be doing

Week 1: Breads

To kick off you’ll be doing some classic Irish bread making exploring flavours of Guinness and seaweed.

Week 2: Smoking

You’ll be working on both cold and hot smoking techniques experimenting with different fuels.

Week 3: Game

This week you’ll be cooking with venison and learn how to use wild meats in the kitchen.

Week 4: Nose-to-tail

Learn how to cook with the whole animal, using offal meat, fats and even try your hand at some butchery.

Week 5: Irish larder

Explore the Irish ‘natural larder’, making your own Irish jams, chutneys, syrups and butters.

Week 6: Challenge week

Taking what you’ve learnt, you’ll put together your final creation, for feedback from your instructors.

Each 6-week long program is an opportunity to perfect new techniques and look for inspiration for your next idea. They’re designed to be hands-on where you quickly go beyond learning in the virtual classroom to making and building your next creation. We also offer business bootcamps for those looking to take their creative idea to market.

What should I get out of a Rassa program?

The Rassa skills programs are designed to give you the professional feedback you need to take your creations to the next level and to help you refine your skills with the support of your instructors, peers and learning resources. Our business programs are for the creative entrepreneurs looking to take their products to market, covering topics such as, go-to-market strategy, customer development and branding.

What is the time commitment?

Across the 6-week program, we recommend a minimum of 4-5 hours per week but if you have the extra time, there’s plenty for you to invest more time into.

Does it matter where I am in the world?

Our programs are entirely virtual. The video classes are easy to watch on your own time and we do our best to accommodate for US and European time zones for live sessions.
