Budgie Montoya
Budgie was born in the Philippines but went on to grow up in Australia before settling in London. He's worked in some of London's hottest kitchens and thrived in the sauce and grill sections. He is now reconnecting with his heritage with his own restaurant concepts Sarap Baon and Sarap Filipino Bistro bringing the bold Filipino flavors to London.
Rex De Guzman
Rex has worked in an AA rosette restaurant, hosted Filipino pop ups and was a finalist on Jamie Oliver's TV show The Great Cookbook Challenge. Filipino cuisine for a long time has been misunderstood and underrepresented so Rex is bringing attention to it with his restaurant Turo Turo.
Gene Gonzalez
Gene has worked in 3* Michelin restaurants around the world and brought his experience back to the Philippines to found the Center for Asian Culinary Studies, creating a formal culinary curriculum for Filipino cuisine. He has since published multiple cookbooks on Filipino cuisine and helped others launch successful Filipino restaurants.

What we'll be covering

Program Curriculum

Week 1: Vinegar Braising

This week you'll get your first introduction to popular Filipino flavors and have a go at an indigenous Filipino cooking technique. You'll be using a key ingredient behind some of the cuisine's most popular dishes including the famous pork adobo - vinegar.

Week 2: Sour Broths

Sour flavors are a key part of Filipino cooking and are used as natural remedies and in comforting broths. This week you'll be tasked with creating your own seafood sinigang experimenting with souring.

Week 3: Chinese Influence

This week you'll learn about the influence of Chinese flavors in Filipino cuisine and make your own version of the noodle dish pancit palabok. You'll also have a go at making your own spread of toppings balancing texture and flavor - a final touch which is serious business in Filipino food culture.

Week 4: Spanish Influence

In your final week you'll be learning about some of the culinary influences from the Spanish colonial era. One of the biggest influences was in the dessert world, which you'll discover as you finish off creating your own Filipino leche flan.

What's in the box?

In your starter kit you'll find ingredients picked and used by professional chefs. Included is everything you need to stock your store cupboard ready for the program (vinegars, noodles, aromatics etc.) and upon sign up you'll be provided with a shopping list and recommended suppliers for the remaining fresh ingredients. Ingredients will arrive portioned with a little extra so you can adjust the flavor to your liking. Each program is an opportunity to perfect new techniques and look for inspiration for your next creative idea or project. They’re designed to be hands-on where you quickly go beyond learning in the virtual classroom to making and building your creations.

What should I get out of a Rassa program?

You'll walk away with new skills and techniques developed with the added support and feedback from your instructors. These programs should get you outside of your comfort zone and introduce new ideas and sources of inspiration to help get you making. Once you have been through one of the programs you continue to have access to a community of makers.

What is the time commitment?

Across a 4-week program we recommend 2-3 hours per week but if you have the extra time, there’s plenty for you to invest more time into. At the end of your program you also have an hour long live workshop.

Does it matter where I am in the world?

Our programs are entirely virtual. The video classes are easy to watch on your own time and we do our best to accommodate for US and European time zones for live sessions.
