If you want to ditch the sad looking bran flakes for something a little more exciting, have a go at making your own granola at home. This recipe is inspired by the flavors of the Middle East using a fresh blend of aromatic spices, date syrup and the pistachio nut. This famous nut has long been popular in the Middle East particularly in Iran where owning pistachio groves historically meant you had plenty of riches and a high status.

Method

Step 1

Preheat oven to 180C/356F and line a baking tray with parchment paper. Grind together your warming spices using a pestle and mortar. Add your oats into a bowl along with your freshly ground spices and some orange zest. Give them a quick mix.

Step 2

Now for texture. We add a mix of pistachios, almonds and walnuts into our bowl. Give everything a good mix. Then we add the date syrup for sweetness and to help our oats to cluster together. Now for one last mix before baking.

Step 3

Pour the contents of your bowl out onto your lined baking tray. Spread them out into a fairly even layer, then bake in the oven for around 15 minutes until golden. Get ready for the delicious smells of spice and caramelizing syrup to fill your home!

Step 4

Once baked, crumble up the oats as much as you like, depending on how big you want the clusters to be. Add any final toppings, like dried fruits or coconut shavings. Then, all that's left to do, is to enjoy your granola over some natural yogurt and if you'd like you can also add some fresh fruits like figs or berries for serving. Enjoy!
