How to Make Non-alcoholic Champagne (Sparkling Tea)

If you want to practise more mindful drinking, have a try of this recipe for sparkling tea as a non-alcoholic alternative to champagne.

To make this sparkling tea you will need to make grape must which is the freshly pressed juice of grapes. Grape must is a key part of the wine making process and is the first stage before left to ferment into wine. For our non-alcoholic sparkling tea, what we’ll do is crush the grapes whole and let them simmer over heat to extract as much of the juice as possible, but we won’t ferment the juice into alcohol.

Ingredients

  • 1x Bunch of grapes
  • Mint leaves or mint tea
  • Green tea
  • Black tea
  • Soda water or lemonade

Method

Rinse and pick the grapes off the stems. Pour into a saucepan and crush the grapes with a potato masher.

Heat the grapes on a medium heat and leave to simmer for around 10 minutes. Give them another once over with the potato masher to extract as much juice as possible.

Pass the grape juice through a fine sieve and set aside.

Now to brew your teas. Put each type of tea in a separate glass, cover with cold water and leave to brew for about an hour. Once brewed, pass each tea through a fine sieve, keeping them separate.

Now to combine our ingredients into a champagne glass. You can play around with the ratios here to suit your taste. First we add the grape must, followed by a generous splash of each tea and when it comes to serving, add your fizz of choice - soda water if you prefer a sharper taste or lemonade for something sweeter. Fill your glass up with your soda water/lemonade stopping about a finger width shy of the rim to leave space for the foam. For the full effect, serve as soon as you add the fizz whilst you can still see the light foam.
